Consuming carp from Belwood Lake & Guelph Lake (Fish in Canada)

Subject: Consuming carp from Belwood Lake & Guelph Lake
Just wondering if anyone here can say what the carp is like from either of these two reservoirs. The Ontario guide to sport fishing places no consumption restrictions on carp caught in these waters. Does "wild" carp always have a very strong muddy flavour? Although these are bony fish and a pain to clean (tough bones and scales!), there´s lots of meat there. I´m thinking of catching a couple and rather than filleting them, cutting the fish into 1"-2" steaks and freezing them, to consume every now and then.

Any opinions/experience would be most appreciated. Thanks.

the best way to do carp is catch them when the water is cold.
try just gutting them,clean it up,then stuff them like chicken,and bake it.
