Notarized Employment Contract!

Subject: Notarized Employment Contract!
  I worked on two jobs in the US. The employer of my last job only offers me the letter of offer. There is no any kind of employment contract. It seems that quite some companies in US only give the employees the letter of offer stating that the employment relationship is at will and either party can stop this employment relationship at any time. In this case, I am unable to provide the notarized employment contract required by Canada PR application. However, my last employer does agree to offer me the letter of reference.

If anyone of you is experienced in this issue, I will really appreciate any advice from anyone of you.

P.S. I am wondering whether pay stub will be in lieu of employment contract?

You have to provide conclusive proof of your employment like reference letters from your employers explaining your job duties in detail, pay stubs, tax returns etc. Provide as many documents as possible.

It is not required to provide the notarized employment contract.
