Hi,
I applied for residency under the Family Class section, and I´m Brazilian. We´re married and she´s in Canada - she´s paranoid about the interview I have really soon and I´m not sure how to tell her to relax. Is this pretty much a foolproof method? We´re totally legitimate, have been living together for almost 2 years, sent proof of bank accounts, bills, etc..

if you are "really" married you guys shall not be worried about the interview.
I don´t know what you mean by "foolproof", but i guess that if you can prove that you are married and love each other etc you´ll be just fine.
"foolproof" methods don´t exist, imo

thanks. we are %100 percent legit, it just seems so arbitrary that this process has to be done. I mean, I wouldn´t have married her if I didn´t plan on spending the rest of my life with her, and now that may hang in the opinion of some completely unrelated individual across a desk.

the problem is that for every person like you there is someone who marries for fraudulent entry into Canada. Who is who? That is the job of CIC- to figure it out.
