Subject: Permanent residency
  I am a Canadian living in Guatemala for 10 years. My wife and I have been married 8 years legally. We have a kid and he is Canadian/Guatemalan living here with us. My wife is Guatemalan and speaks English fluently without an accent.

We want to relocate to Canada and apply for sponsor/permanent residence.

Will I need to provide proof of employment for last 12 months or proof of finances or simply a job offer and reasonable proof that I will return to Canada with her?

You do not have to show proof of income but you definitely will have to sign an undertaking that you will resettle in Canada with your spouse and children.

Since you are a Canadian Citizen you should have filed your tax returns regardless if you earn your income overseas, all Canadians are supposed to declare their world income.
Do not worry, just apply for an Option C Print out for your last tax assessment.

I do not see you have any problem, go ahead an sponsor your wife.
