First name VS last name for potential employer

Subject: First name VS last name for potential employer
  Hello everybody
I have a question that is too naive but I want to be sure as it is a cultural thing. In fact I am searching for a job in Quebec and I got some e-mail responses from potential employers (occupation: Research & Academics). As deliberations are going on through e-mail, some address me Dear Mr. "Last name" while other write Dear "first name".
I want to ask how should I address to them? At what stage I may use their first name?

When you address a formal letter I would recommend you to use the following format:

Mr/Ms/Mrs.... Last Name.
