Anybody could tell me if, after a sponsorship is accepted, the Embassy in Beijing will begin the processing for a permanent resident visa while waiting for the Quebec Selection Certificate?
This would be a great way not to waste time and have our loved one here more rapidly.

Yes, they will begin processing. Unless you selected the box not to proceed if found ineligible to sponsor (See top of application). Then they may wait till the Quebec Selection Certificate is granted before proceeding with your wife´s Application for Permanent Residence.
I´ve sponsored my American wife to move to Montreal and processing of the PR application was initiated prior to receiving the QSC.

no problem.
You should receive the QSC within 60 days of submitting the Quebec sponsorships forms to the Montreal office.
