Subject: Re-entering Canada
  Something unexpectedly happened to my parents and I will have to stay in my own country for at least a year or so in order to take care of them. However, I understand that I need to stay 2 years out of 5. If I am staying out of Canada more than a year after landing, would that be any issue when I re-enter Canada again with PR card? Will the custom stop me from entering Canada or remove my PR status? Can I stay in Canada for the last two years out of 5 years to make up for those years that I am unable to make it during the first 3 years for family issue? I really intend to keep my Canadian PR status. However, thing always happened unexpectedly. Can someone share their experiences with me in any similar case?

As per laws, yes you can spend upto 3 years out of Canada and then re-enter Canada with your PR. That period can be on shot or segments.

However, as per laws also, the port officer has the right to deniy your entry if he feels that your are well connected to Canada.

So in your case, I recommend having something to proof your parents problem, like that you will have a support. I do not fresee any problem if it si a year or so.
